Choose tender beef.

Cut the beef into thin slices, the blade of the cleaver crossing the shreds of the beef.

Put small amount of liquor, salt and soybean sauce to the beef fillet. Wrap the meat with some starch. Pickle the meat for a moment.

Heat the wok until it reaches high temperature. Pour oil into the wok. The amount of the oil can be greater than the oil for cooking pork.

Keep the fire burning. Put beef slices to the wok and fry it quickly with big fire. Then add ginger and garlic. Fry for 30 seconds. Turn off the fire. Add ingrediants: salt, soybean sauce, vinegar, sugar, scallion. 

Fry the beef for 30 seconds. Turn off the fire.

Tips:

The beef is tender, fried with hot oil in hot wok. The beef will instantly be cooked in high temperature. With cold oil, the beef would probably not taste tender.

Sprinkle the scallion at last. If the scallion is added before placing the beef, the scallion would be overcooked, loosing the color and fresh flavor.
