Sherry & Shakespeare

If I had a thousand sons, the first human principle I would teach them would be to forswear thin potations and dedicate themselves to Sherry.

Fino ('fine' in Spanish) is the driest and palest of the traditional varieties of Sherry. The wine is aged in barrels under a cap of flor yeast to prevent contact with the air.

Manzanilla is an especially light variety of Fino Sherry made around the port of Sanlúcar de Barrameda.

Manzanilla Pasada is a Manzanilla that has undergone extended aging or has been partially oxidised, giving a richer, nuttier flavour.

Amontillado is a variety of Sherry that is first aged under flor and then exposed to oxygen, producing a sherry that is darker than a Fino but lighter than an Oloroso. Naturally dry, they are sometimes sold lightly to medium sweetened but these can no longer be labelled as Amontillado.

Oloroso ('scented' in Spanish) is a variety of sherry aged oxidatively for a longer time than a Fino or Amontillado, producing a darker and richer wine. With alcohol levels between 18 and 20%, Olorosos are the most alcoholic sherries. Like Amontillado, naturally dry, they are often also sold in sweetened versions called Cream sherry. As with Amontillado "Sweet Oloroso", "Rich Oloroso" and "Oloroso Dulce" are prohibited terms.

Palo Cortado is a variety of Sherry that is initially aged like an Amontillado, typically for three or four years, but which subsequently develops a character closer to an Oloroso. This either happens by accident when the flor dies, or commonly the flor is killed by fortification or filtration.

Jerez Dulce (Sweet Sherries) are made either by fermenting dried Pedro Ximénez (PX) or Moscatel grapes, which produces an intensely sweet dark brown or black wine, or by blending sweeter wines or grape must with a drier variety.

Cream is a type of sweet sherry first made in the 1860s by blending different sherries, usually including Oloroso and Pedro Ximénez.

On 12 April 2012, the rules applicable to the sweet and fortified Denominations of Origen Montilla-Moriles and Jerez-Xérès-Sherry were changed to prohibit sweet Oloroso and sweet Amontillado banning terms such as "Rich Oloroso", "Sweet Oloroso" and "Oloroso Dulce". Such wines are to be labelled as "Cream Sherry: Blend of Oloroso / Amontillado" or suchlike

Poem

If music be the food of love, play on;

Give me excess of it, that, surfeiting,

The appetite may sicken, and so die.

That strain again! it had a dying fall:

O, it came o'er my ear like the sweet sound,

That breathes upon a bank of violets,

Stealing and giving odour! Enough; no more:

'Tis not so sweet now as it was before.

O spirit of love! how quick and fresh art thou,

That, notwithstanding thy capacity

Receiveth as the sea, nought enters there,

Of what validity and pitch soe'er,

But falls into abatement and low price,

Even in a minute: so full of shapes is fancy

That it alone is high fantastical.

Comments for the poem

@赵亚丽This poetry mainly talkes about music and love. From its first two lines, we can know music is very wonderful for love. If music is the food, love is willing to choke it until death, because this a pleasant thing for love. What music is to love as a piece of bread to a hungry person. Music is so sweet, when she comes over "my ear", she gives "me" a pleasant feeling, like a breath of wind "runs cross" violets and "steals" odour for "me". Music is like the spirit of love, and music is a way of expressing love. Many people choose music to express their deep love to their sweethearts. And we know that music is always used on Romantic candlelit dinner to creat a lovely atmosphere and to express love. And we find that music is always used to proposaling to increase the success rate. Music is really magic in love.

@张嘉毅About the "If music be the food of love, play on" I think that Orsino is asking for more music because he met some obstacles in the process of pursuing the Countess Olivia. He stressed that a large amount of music might cure his obsession with love, and eating too much will affect one's appetite for food.
