e_muaddib：The pots in the middle of the table are kept hot via a hot plate. You cook all the vegetables and proteins in the broth as you eat. I highly recommend it if it’s available in your area.

cheguevara9：I think the youtiao has more going on than the soup soaking quality, it’s crunchy and flakey. I like to just barely dip it in the soup instead of leaving it in there, so it retains the crunch.
