Design of Maotai-flavor Liquor Factory with an annual output of 4270 tons(Key Workshop: Wine Depot)

Abstract

The task of this production design is to design a Maotai-flavor liquor factory with an annual output of 4270 tons. The main product is 53% (V/V) Maotai-flavor liquor.According to the site selection requirements of Maotai-flavor liquor factory, a factory was built in Xitou Town, Renhuai City, Guizhou Province, because Renhuai City, also known as Maotai-flavor liquor town, can withstand the test of complicated environmental requirements of Maotai-flavor liquor in terms of local climate and water resources.The summer temperature in Xitou Town lasted as high as 35℃ and the rainfall was more than 800 mm, which was suitable for the growth and reproduction of wine-making microorganisms.Next to the Yunle River for the town's people's living water, pollution-free sources, adequate water, water microbial species and content in line with brewing water standards, can be used as brewing water.

Local winter wheat, raw material, artificial trampling, high temperature composting, and starter blocks are selected as raw materials for starter making, which are stored after ripening and used for liquor making after grinding. The local waxy sorghum was used as raw material for liquor-making, and the method of mixed steaming and continuous residue was adopted. The liquor was accumulated at high temperature, flowed at high temperature and stored for a long time. The production cycle was 10 months, twice feeding, nine cooking, eight fermentation and seven liquor-picking. After long-term storage, inventory, blending and seasoning, the liquor in turn is packaged and discharged from the factory. The packaging materials are 500 mL ceramic bottles, 1*12 corrugated cartons, and automatic packaging line, which reduces manpower. The focus of this design is the wine store workshop, so the design of wine, Daqu, packaging and other production processes are briefly introduced, at the same time, the storage capacity of the wine store workshop, environment, technology and so on to do a more detailed introduction.
