烤猪肘子和土豆

This pork shoulder recipe is simple to make on a lazy Sunday because you just put it in the oven and it cooks on its own. The pork comes out moist and flavorful. You’ll have plenty of leftovers for the next day. Shred pork with a fork to make one of my family’s favorite, pulled pork sandwiches on a crusty Portuguese roll.

Serves 10-12

1 (6 to 8 pound) fresh pork shoulder

2 tablespoons sea salt or kosher salt

1 teaspoon fresh ground pepper

1茶匙新鲜的胡椒粉

3 garlic cloves (chopped)

3瓣儿蒜,切碎

1 large onion (chopped)

1只大洋葱,切碎

3 large carrots (cut into quarters) 

3只大胡萝卜,切成4等份

1 bay leaf

1个月桂叶

6 to 8 potatoes (cut into cubes)

6-8个土豆,切成滚刀块

1 tablespoon olive oil

1汤匙橄榄油

1 teaspoon paprika

1茶匙辣椒粉

1 cup of white wine

1杯白葡萄酒


Preparation:

Let pork sit for at least 30 minutes to reach room temperature before prepping.

让肘子在室温下放置至少30分钟。

Preheat oven to 400 degrees F.

预热烤箱大约205摄氏度。

Wash and pat dry the shoulder. Place on a cutting board and score the skin being careful not to cut into the meat. Season the pork with salt. Place skin side up and place in large roasting pan with olive oil. Cook uncovered for 30 minutes until the skin starts to get crackling and browned.

After 30 minutes, turn the heat down to 325 degrees. Cover with lid or very tightly with heavy foil and cook for 2 hours.

半小时后,把温度调到大约160摄氏度,盖上盖子,或者用厚的锡箔纸盖上,再烤2小时。

After 2 hours, remove from the oven and coat the pork with the paprika, garlic and onions. Add carrots in the pan evenly around the pork and baste with pan drippings. Add the wine and stir.

2小时之后,把肉从烤箱里面拿出来,把辣椒粉、洋葱和大蒜裹在肉上,把胡萝卜均匀放在烤盘里面肘子周围,让胡萝卜裹上盘里面的油脂。再加入葡萄酒,稍微搅拌一下。

Cover the pork and continue cooking at 325 degrees for 1 hour. After 1 hour, baste with pan drippings.

盖上盖子,继续在160摄氏度烤1小时,1个小时以后,把烤盘里的油脂涂抹在肘子上。

Add the potatoes evenly around the pork and baste with drippings. Add a little more wine if you find the juices have dried out.

在肘子周围再加上土豆,同样把烤盘里的油脂涂抹在土豆上,如果你发现盘里的汁液已经干了,那么再加点儿葡萄酒。

Cover and cook for another 45 minutes at 325 degrees.

盖上盖子,继续在160摄氏度下烤45分钟。

Let pork rest for 10 minutes before slicing.

从烤箱中拿出来,等上10分钟,切开享用吧~
