波尔多 Bordeaux

Cabernet Sauvignon  赤霞珠


Grape variety:Cabernet Sauvignon.

Characteristics:

High-quality black grape with blackcurrant fruit character and high levels of acid and tannins.

It has an affinity with oak and it can produce deeply colored wines with the structure needed for long aging.

It is at the northern limit of where it can ripen and even when ripe it can be quite austere and softened by being blended with Merlot.

When it is unripe it can be noticeably stalky and herbaceous.

Cabernet Sauvignon

Grape variety:Merlot.

Characteristics:

A black grape with plum fruit character and medium tannins. It has less color than Cabernet Sauvignon. Gives body, softness and richness to the blend.

Many modern examples have followed the international styles of super ripe fruit instead of a more restrained and structured traditional style.

Yields need to be kept low if it is to be of high quality and it is often blended with Cabernet Sauvignon or Cabernet Franc for extra structure and aroma.

Merlot is the leading grape variety in inexpensive blends as it is better suited to produce a softer, easy-going red.

Grape variety:Cabernet Franc.

Characteristics:

A black grape that ripens earlier than Cabernet Sauvignon, with similar but not intense fruit character and lighter in body.

It rarely takes a leading role in a blend.Sometimes herbaceous and stalky when unripe.When ripe, it gives a marked fragrance and color to the blend.

Petit Verdot  味而多


Grape variety:Petit Verdot

Characteristics:

A black grape variety that only ripens in the hottest years, so it is less important than the other grapes.

It gives spicy, very deep-colored, tannic wines, that age slowly.

It is added to the blend in small amounts to add color, tannin and a spicy seasoning.

Its impact can be disproportionate to its volume.
