Churros

中国有油条,西班牙有什么?哈哈,当然是小油条吉事果啦,这个小吃已经成功俘获了五大洲吃货的心,还等什么,做起来啊!

You’ll need a cake-decorating tube or piping bag with a large star tip to make the churros into their classic shape. The key to perfect churros (with chewy middles and crispy outsides) is to wait until your oil is hot enough. Otherwise, you’ll have soggy, limp churros; and who wants that? Dress up the sweet treats with a side of chocolate dipping sauce or some Mexican Hot Chocolate.

你需要一个蛋糕装饰管,或者你需要一个带有星形尖端的裱花袋,这样做是为了让吉事果的形状更加经典。完美吉事果(外焦里嫩)的要点就是你要等油足够热。否则的话,你将会得到浸了油的软塌塌的吉事果,谁想吃这样的东西呢,┓( ´∀` )┏。用巧克力酱或者墨西哥热巧克力装饰均可~


材料:

Vegetable oil

菜油

1/3cup unsalted butter

1/3杯无盐黄油

2 tablespoons brown sugar

2汤匙红糖

½ teaspoon salt

半茶匙盐

1 cup all-purpose flour

1杯中筋面粉

2 large eggs

2只大鸡蛋

1 teaspoon vanilla extract

1茶匙的香草精

¼ cup granulated sugar

1/4杯的砂糖

1 teaspoon ground cinnamon

1茶匙肉桂粉


步骤:

Over medium-high heat, heat a deep skillet with about 2 inches of vegetable oil to 375°F.

中高温火,加热一只深的平底锅,大约倒入5厘米深的菜油,加热油温到190摄氏度。

While the oil is heating up, add 1 cup of water, the butter, brown sugar, and salt to a large saucepan and bring to a boil. Remove from the heat and quickly stir in the flour until the mixture forms into a ball (it’ll take about 1 minute).

当油在加热的时候,你也别闲着,把一杯水、黄油、红糖和盐加入到一个平底锅里面,拿去煮沸。移开火之后快速加入面粉,搅拌直到这些混合物形成一个球,这大约得用1分钟。

In a separate bowl, whisk together the eggs and vanilla, then add to the flour mixture, stirring until well combined. The dough should be sticky.

在一个碗里面,把香草精和鸡蛋一起搅拌,然后加入面粉混合物,搅拌直到它们完全混合,这时候的面团应该是软粘的。

Combine the granulated sugar and cinnamon on a plate.

把砂糖和肉桂粉混合放在一个盘子里。

Put the dough into a decorating tube or pastry bag fitted with a large star tip. Check that the oil is ready , then squeeze the dough into the oil, starting from the outside of the pan and spiraling in.

把这个面团放在一个装饰管中或者一个有星形尖端的裱花袋里,检查一下油温是否合适,然后把面团挤入油中,从锅边开始挤,直到中心螺旋着来~

Fry until golden brown all over, about 2 minutes on each side. Using a slotted spoon or long wooden chopsticks, remove the churros from the oil and place on a large plate lined with paper towels to absorb the grease. While the churros are still warm, roll them over the cinnamon-sugar mixture until well coated. Repeat until all the dough is used. Cut the churros into 4-inch-long pieces, being careful not to burn yourself.

炸到金棕色为止,上下面大约每面2分钟。用一个漏勺或者一双长的木筷子,把吉事果从油里面捞出来,捞出来之后放在一个有纸巾垫着的大盘子里面,为的是吸取过多的油。当吉事果温度降下来的时候,让它们裹上砂糖肉桂粉。然后把吉事果切成大约10厘米长的段儿即可。一定要小心不要烫伤自己哦~

NOTE:To test your oil without a kitchen thermometer, place a dollop of the dough into the oil. When the oil is hot enough, the dough will begin to bubble up right away.

注意:检查油温是否合适不需要用厨房温度计,你只要拽一点面团放在油里面,如果油足够热了,面团会立即起泡~
