These garlicky potatoes are a delicious side dish and so easy to make that you may never peel another potato again. Just wash and pat them dry, coat them with olive oil and salt, and then bake. I make the garlic oil by placing the oil in a small pan or microwave dish, cook for a minute or two and then drizzle the oil over the cooked potatoes. These potatoes are often served with baked bacalhau or fish, but pair wonderfully with any meat.

Serves 6-8

2 pounds small round potatoes (unpeeled)

Coarse salt

4 to 6 cloves garlic (finely chopped)

½ to 1 cup of olive oil

Preparation

准备:

Wash and scrub the potatoes. Remove any blemishes and pat dry. Pierce with a fork in a couple of spots.

把土豆洗干净,把上面的瑕疵污点都扣掉,用叉子在几个地方刺破。

Coat with a drizzle of olive oil and rub with sea salt. Place potatoes in small oven proof dish or pan.

裹上橄榄油,表面擦点儿盐。把土豆放在烤盘里面。

Cook at 400 F for 45 minutes to 1 hour depending on your oven.

Meanwhile, make garlic oil:In a small saucepan or microwave heat the oil and add the garlic. Cook on low for a minute or two until the garlic turns slightly golden. Do not overcook or the garlic will become bitter.

同时,开始做大蒜油:在一只小平底锅里面或者微波炉里面,加热橄榄油,加入大蒜。用小火加热,直到大蒜变成轻微的金色,不要煎过头了,以防大蒜变苦。

To test potatoes for doneness, pierce them with a fork or gently squeeze a potato holding your oven mitt. The potato should be soft.

如何检测土豆有没有熟呢?用一个叉子叉一下,或者用手套捏一下土豆,这时候的土豆应该是软的。

When the potatoes are ready, punch them down with your fist wrapped in a clean dish towel or with a meat mallet until they “pop” open.

当土豆做好了,把你的拳头用干净的抹布包起来,或者用一下小肉锤子,打一下土豆,让它们开花儿~

Note:The potatoes are hot, be careful! When ready to serve, gently spread open the potatoes and pour the warm garlic oil over them.

注意:土豆很烫,要小心!当要上菜的时候,轻轻把土豆摊开,在上面浇上温热的大蒜油即可享用~
